French Cut Australian Rack of Lamb
Cooking Instructions
Leg of Lamb (Whole)
Thaw product in the packaging on a plate in the refrigerator overnight. Season to taste and place the lamb in a roasting pan. Preheat oven to 400*F. Cook for 30 minutes then reduce the oven temperature to 350*F. Continue to cook for about 90 minutes. Use a meat thermometer to check the internal temperature of the meat. Remove when the temperature reaches 160*F or higher, making sure that the thermometer is not touching the bone. Allow to rest for 10 minutes before carving. Slice thinly around the bone and serve.
